Throw these onto the grill, or simply pan fry them in a skillet. Either way, these bean burgers are juicy and savory.
Prep Time: 30-40 minutes
Cook Time: 10 minutes
Total Time: 40-50 minutes
Servings: 12 patties
Ingredients
15 oz. can of Black Beans
15 oz. can of Chickpeas
2 Large Portobello Mushrooms, diced into 1-2 inch chunks
1 Red Bell Pepper, diced into 1-2 inch chunks
1 Large Red Onion, sliced
5-6 Cloves of Garlic
Pinch of Salt to taste
Pinch of Pepper to taste
Egg Replacer - equal to 2 Eggs , I used Bob’s Red Mill brand
2 Tbsp. Tamari
2 Tbsp. Sriracha
2 Tbsp. BBQ Sauce
⅓ cup Nutritional Yeast
1 cup Bread Crumbs
2 tsp. of Cornstarch mixed with equal parts water
About 1 cup of Brown Rice Flour (you may use more or less depending upon the consistency of the burger). All-Purpose Flour can be used as well.
Instructions:
Chop the portobello mushrooms, red bell peppers, and red onions. Toss chopped veggies and garlic into a skillet and saute until they’re cooked down on medium-high heat for about 5 minutes. Season with salt and pepper. Once you can poke the veggies with a fork, turn off the heat.
Place the vegetables on the side and allow them to cool down.
While the veggies cool, prepare your egg replacer and cornstarch mixture. Once the veggies are cool, toss them into a food processor.
Add your pinch of salt and pepper, BBQ sauce, tamari, cornstarch mixture, and egg replacer into the food processor.
Blend together until the ingredients are combined. The texture should be chunky.
Next, add in your black beans, chickpeas, nutritional yeast, and bread crumbs into the food processor.
Continue to blend/pulse all ingredients together. Try not to over blend the mixture. You want there to be chunks of beans.
Remove the mixture and place into a large mixing bowl. Slowly you will add in the brown rice flour (About ¼ cup at a time). Use your hands or a wooden spoon to fold the flour into the bean mixture.
Continue to add flour until you are able to get a consistency that can be molded/shaped into burgers.
Once you have the consistency you’re looking for, take a palm full of the bean mixture and form your patties. They can be whatever size you prefer.
When your patties are formed, place them in the freezer for about 20 minutes to allow the mixture to solidify prior to grilling/cooking them. If you have leftover patties, feel free to throw them in the freezer for later use. Enjoy!
