Crispy Sweet Potatoes with Roasted Garbanzo Beans & Asparagus

Ingredients

- 1 Large Sweet Potato

- 1 Bunch Asparagus

- 1 Can (15 oz.) of Garbanzo Beans

- Extra Virgin Olive Oil

- Seasonings of your choice. I used the following: Paprika, Garlic Powder, Dried Thyme, Salt, Pepper, and Seasoning Mix (I used the No Salt Seasoning from Costco)

- 1 Avocado (optional)

- Pinch of Baking Soda


  1. Bring a medium sized pot to boil. Cut the sweet potato into 1 inch thick cubes. Once the water is boiling, sprinkle some salt and a pinch of baking soda. NOTE: The baking soda will help draw out excess moisture from the potatoes - allowing it to crisp more when baking.

  2. Add the sweet potatoes into the pot and boil for about 10 minutes. Next, preheat the oven to 350 degrees Fahrenheit.

  3. Line a large baking sheet with parchment paper. Open and drain the can of garbanzo beans and place it on one side of the tray. Remove about 1/2 an inch from the bottom stem of the asparagus. Add the asparagus onto the other half of the tray, ensure that they are flat and not layering on top of eachother.

  4. Drizzle olive oil over the garbanzo beans and asparagus. Season with your preferred seasonings. When the oven has reached the set temperature, bake the beans and asparagus for 15 minutes.

  5. Now, the potatoes should be done parboiling. They are ready if they are fork tender - you can poke them with a fork. Drain water from the sweet potatoes. Set aside.

  6. In a small bowl, mix about 1/2 cup of olive oil and seasonings. I used paprika, garlic powder, dried thyme, salt, and pepper.

  7. Line another medium sized baking sheet with parchment paper. Place the potatoes onto the pan, keeping at least 1 inch between each potato.

  8. Using a basting brush, coat each potato with the olive oil seasoning mix. Set aside until the garbanzo beans and asparagus are done baking.

  9. Once the garbanzo beans and asparagus are done, remove them from the oven and increase the oven temperature to 425 degrees Fahrenheit.

  10. When the oven reaches the new temperature, place the baking sheet with potatoes in and bake for 15 minutes. After 15 minutes, remove the potatoes and flip them over.

  11. Coat the potatoes with the olive oil mixture one more time, and bake the potatoes for and additional 10 minutes. Once they're done, remove from the oven and turn off the heat.

  12. You can serve immediately or separate into 3 different meals for a meal prep. Cut an avocado to serve for freshness if you please! Enjoy!
