Zucchini, Chive, and Cheese Bread

This savory bread is great for anytime of day! Have it for breakfast, or with some soup for dinner.

Prep Time: 10 minutes

Cook Time: 1 hour to 1 hour and 15 minutes

Total Time: 1 hour and 10-25 minutes


Ingredients

- 1 Medium Zucchini, grated

- 1 1/2 cups Shredded Cheese Blend (I used a Mozzarella, Monterey Jack, and Cheddar Blend)

- 1 Small bunch of Fresh Chives, chopped

- 2 cups Flour

- 1/2 Tsp. Baking Soda

- 1 1/2 Tsp. Baking Powder

- 1/2 Tsp Salt

- 2 Tbsp. Sugar

- 1 Egg

- 1/4 cup Butter, melted

- 1 cup Buttermilk


Instructions

1. Preheat the oven to 350 degrees.

2. Start with grating the zucchini and chopping the chives. Be sure that the zucchini is shredded at a medium grate. Set aside.

3. In a large bowl, combine all dry ingredients (flour, baking soda, baking powder, salt, and sugar). Mix together well.

4. In a medium bowl, whisk wet ingredients (egg, buttermilk, and melted butter). NOTE: Add melted butter into the mixture slowly to prevent eggs from curdling.

5. Next, pour the wet ingredient mixture into the dry ingredient mixture in increments. Be sure to not over mix the batter. So once the mixture is combined, stop mixing.

6. Fold in the shredded zucchini and cheeses until combined well with the batter.

7. Spray a bread pan with non-stick spray (you can use vegetable or canola oil), then line the pan with parchment paper. Pour the bread batter into the pan and level the top using a spatula.

8. Place the pan in the oven and bake for 1 hour. Using a toothpick, poke the center of the bread. If the tooth pick comes out clean, the bread is done. If there is still batter, continue to bake for an additional 5-15 minutes as needed.

9. Once the bread is done cooking, remove it from the oven and set aside to cool. Enjoy!
