Plant-Based "Ricotta"

If you like ricotta cheese, you should try out this plant-based version!

Servings: About 3 cups of “Ricotta Cheese”


Ingredients

  • 3 cups Salted Macadamia Nuts (raw)

  • 2 Tbsp. Nutritional Yeast

  • ¾ cup Fresh Basil

  • 2 Tbsp. Lemon Juice

  • 1 Tbsp. Extra Virgin Olive Oil

  • Salt and Pepper to Taste

  • ½ cup Water


Instructions

  1. In a food processor, blend raw macadamia nuts until it reaches a rough sand like consistency. Every few pulses, open the food processor to mix macadamia nuts around to ensure all large pieces are broken down.

  2. Next, add in the remaining ingredients and blend. Open the food processor every few blends or seconds to scrape sides to ensure all ingredients are blended well.

  3. Once you have a thick, semi-smooth consistency, the “ricotta” is ready.

  4. Use this in lasagnas, pastas, or as a spread or dip. Store in your refrigerator up to 1 week. Enjoy!
