Plant-Based "Ricotta"

If you like ricotta cheese, you should try out this plant-based version!

Servings: About 3 cups of “Ricotta Cheese”
Ingredients
- 3 cups Salted Macadamia Nuts (raw) 
- 2 Tbsp. Nutritional Yeast 
- ¾ cup Fresh Basil 
- 2 Tbsp. Lemon Juice 
- 1 Tbsp. Extra Virgin Olive Oil 
- Salt and Pepper to Taste 
- ½ cup Water 
Instructions
- In a food processor, blend raw macadamia nuts until it reaches a rough sand like consistency. Every few pulses, open the food processor to mix macadamia nuts around to ensure all large pieces are broken down. 
- Next, add in the remaining ingredients and blend. Open the food processor every few blends or seconds to scrape sides to ensure all ingredients are blended well. 
- Once you have a thick, semi-smooth consistency, the “ricotta” is ready. 
- Use this in lasagnas, pastas, or as a spread or dip. Store in your refrigerator up to 1 week. Enjoy!
