Mexican Quinoa Salad

Ingredients

  • 1 cup Quinoa, uncooked

  • 15 oz. can of Black Beans

  • 15 oz. can of Pinto Beans

  • 15 oz. can diced tomatoes

  • 1 cup Frozen Corn

  • 1 ½ cup Vegetable Broth

  • 1 Tbsp. Cumin

  • 1 medium or large Jalapeno, depending on how spicy you want the dish

  • 2 Plant Based Sausages, sliced (optional)

  • 1 Green Onion, sliced (to garnish)

  • ½ cup Cilantro, chopped (to garnish)

  • Lime Juice to taste (to garnish)


Instructions

  1. First, dice the jalapeno. If you don’t want the dish to be too spicy, you can remove the seeds.

  2. In a large skillet, on medium-high heat, saute the jalapenos, about 1-2 minutes or until fragrant.

  3. Rinse drain and rinse the black and pinto beans, then add them to the skillet

  4. Next add in the quinoa and frozen corn. Give the pot a good stir and let everything cook for 2-3 minutes.

  5. Now add in the vegetable broth, and bring it to a boil. Once it begins to boil, cover the pot and lower to medium-low heat and simmer for 25-30 minutes.

  6. Once all the liquid has evaporated, turn off the heat. Remove the lid, and fluff quinoa. Garnish with green onions, cilantro, and lime juice. Enjoy!
