Tuna Salad Sandwich

If you're in need of a quick meal, or something "light" for lunch!

Prep Time: 5 minutes

Cook Time: 2 minutes (to assemble sandwich)

Total Time: 7 minutes


Servings: 1-2 (depending on sandwich size you prefer)


Ingredients

- 1 can of Tuna (in water with no salt)

- 1 or 2 tbsp. Kewpie Mayo (Japanese Mayo), use 2 if you prefer a more creamy texture

- 1 tsp. Paprika

- 1 tsp. Dijon Mustard

- 1/4 of a medium Red Onion, diced

- 1 stalk of Celery, diced

- 1 cup of Microgreens, or any greens of your choice

- 2 slices of a Bread of your choice


Instructions

1) Dice the red onions. Once they're diced, place them in a small bowl with water. This will make them less pungent.

2) Next, dice the celery and set aside. Next, drain the canned tuna and place into a small mixing bowl.

3) Into the bowl, add the mayo, paprika, dijon mustard, celery, and drained onions. Mix everything together until well combined.

4) Assemble the sandwich by placing the tuna salad and greens onto the slices of bread. Enjoy!
