Grilled Cheese & Tomato Bisque

A true classic comfort food dish :)

Servings: Grilled Cheese (1), Tomato Bisque (2-3)


Ingredients

- Tomato Bisque

  • 6 Red Vine Tomatoes

  • 5 Cloves of Garlic

  • 1 Red Onion

  • Extra Virgin Olive Oil

  • Fresh Rosemary and Thyme Sprigs

  • Salt and Pepper to Taste

  • 1 tsp. Sugar

  • 1 tsp. Cayenne Pepper

  • Creme Fresh (for topping)

  • 1/4 cup Heavy Whipping Cream

- Grilled Cheese

  • 2 Slices of Bread, your choice

  • 2 Slices of Colby Jack Cheese

  • 2 tbsp. Unsalted Butter


Instructions

- Tomato Bisque

  1. First, preheat the oven to 450 degrees.

  2. Cut the tomatoes in halves. Be sure to remove the top portion where the stems were connected.

  3. Next, roughly chop the onions, and slice the garlic. In a dutch oven (or pot that can go into the oven), add olive oil. Place the tomatoes, onions, and garlic. Season with salt, pepper, and cayenne pepper. Allow the tomatoes to cook on one side, and them flip them after about 3-5 minutes each side.

  4. Once the tomatoes are slightly charred, or the skins a bit wrinkled, place the pot into the oven (without the lid), and roast for 20-25 minutes.

  5. When the tomatoes are done, use a hand blender (or pour contents into a regular blender) to mix the ingredients until you have a smooth consistency. If you used a standing blender, pour the soup back into the pot.

  6. Add the heavy whipping cream, thyme (leaves only), and rosemary (leaves only) to the tomato soup, and mix until well combined. Cook for an additional 5 minutes on low heat.

  7. When serving, add a little bit of creme fresh to your liking and enjoy with the grilled cheese - or by itself!

- Grilled Cheese

  1. Heat a medium pan, on medium-low heat. Add in 2 tbsp. of butter and allow it to melt. Once the butter has melted, place your 2 slices of bread into the pan.

  2. Once the bread starts to get a lightly brown, place your slices of cheese onto one of the bread slices (the part of the bread that is facing up).

  3. Next, place the other slice of bread onto the other. Once the bottom side of the sandwich is golden brown, flip the sandwich over so the other side can toast.

  4. When both sides of the sandwich has reached a golden brown color, remove from the heat and enjoy by itself or with the tomato bisque!
