Bacon and Egg Sandwich

Breakfast on the Go!

Servings: 1 sandwich


Ingredients

- 1 Piece of a Thick Bacon Slice

- 1 stalk of Green Onion

- 2 Eggs

- Brioche Buns

- 1 tbsp. Heavy Whipping Cream

- 2 tbsp. Unsalted Butter

- Salt and Pepper to Taste


Instructions

  1. In a pan, fry your bacon. Once it's crispy, set aside on a plate with a paper towel to drain excess fat and oil.

  2. Next, chop the onions into thinly. Set aside. Into a small mixing bowl, combine eggs and heavy whipping cream. Beat the egg mixture until it starts to foam a little. Set aside.

  3. Wipe down the pan that you used to cook the bacon. On low heat, melt 1 tbsp. of butter. Place the brioche buns into the pan to toast the inside of them. Once they're toasted, remove and set aside.

  4. Wipe down the pan, and on low heat, melt 1 tbsp. of butter. When the butter is half way melted, pour in the egg mixture. Using a spatula, push from eggs from the outside and into the middle. Avoid moving the eggs too much. Pushing the eggs into the center will allow for fluffy eggs.

  5. While the eggs are still runny, add in the green onions, pepper, and salt to taste. Continue to push the eggs, and then gently fold them over. Remove from the heat.

  6. Now, assemble the sandwich. Place your bacon and eggs onto the buns and enjoy!
