Ingredients
- 1 lb. Dried Penne Pasta
- 2 tbsp. Extra Virgin Olive Oil
- 1 Shallot, diced
- 4 Cloves Garlic, sliced
- 3/4 cups Heavy Cream
- 1/4 cup Tomato Paste
- 1/4 cup Vodka
- Pinch of Salt and Pepper
- 1/2 tbsp. Red Chili Flakes
- 1/2 cup Grated Parmesan Cheese
- 2 tbsp. Butter
Instructions
Bring a medium pot of water to a boil. Once it's boiling, add salt (enough to make the water taste like the ocean). Add in the dry pasta and cook according to the instructions.
Next, cut the shallots and garlic cloves. In a large pan on medium heat, add olive oil, shallots, and garlic. Stir frequently to prevent the garlic from burning. Once it's fragrant, mix in the tomato paste for 2 minutes.
Now add in the vodka, stir well and cook for another 2 minutes then add in the heavy cream. Be sure to stir constantly to prevent burning. Turn the heat down to low and allow sauce to simmer. Add in the salt, pepper, and chili flakes.
Once the pasta has completed cooking, reserve about 1-1 1/2 cups of pasta water - drain the pasta.
Add the pasta to the sauce and coat everything in the sauce, along with the grated parmesan and butter. Once coated, pour in the reserved pasta water and mix. Serve immediately! Enjoy :)
