Thai food at home made easy!

Ingredients
1 package or about 16 oz. Fresh Rice Noodles
4-6 tbsp. Coconut Oil, for Frying
1 tbs. Extra Virgin Olive Oil
1 package Firm Tofu, drained
1 bunch of Chinese Broccoli, roughly chopped
1 Tomato, diced into large cubes
2 Thai Chilies, sliced and seeds removed
5 Cloves of Garlic, minced
1 cup Thai Basil Leaves
3 tsp. Dark Soy Sauce
3 tbsp Stir Fry Sauce
3 tbsp. Tamari
3 tbsp. Mushroom Soy Sauce
2 tsp. Sugar
Instructions
Drain the tofu of water. You can do this by sandwiching it between two plates or cutting boards with a heavy item on top of it. Wrap it with a napkin to help remove excess water.
While the tofu drains, cut and prep the Thai chilies, garlic, and Chinese broccoli. Set aside.
Next, remove the fresh rice noodles from the packaging, and separate the noodles. The noodles will be stuck together, so try to peel them apart as much as possible. I left mine in large pieces, but you can cut them into smaller sizes if you desire. Set aside.
Once the tofu has drained, cut the pieces into 1 inch thick rectangles. In a large frying pan, on medium-low heat, add the coconut oil. When the oil is heated, carefully place the tofu in and shallow fry for about 3-4 minutes or until golden and crispy. Flip the tofu and fry the other side.
When the tofu is golden, remove and place on a plate with a napkin to remove excess oil. Set aside and allow to cool.
In a small mixing bowl, combine dark soy sauce, stir fry sauce, tamari, sugar, and mushroom soy sauce. Whisk until well combined and set aside.
In a large wok pot on medium heat, add in olive oil. Toss in garlic and chilies and sauté until fragrant. Be sure to constantly stir to prevent the garlic from burning.
Next add in the Chinese broccoli. Continue to sauté for about 3 minutes, or until the broccoli is tender.
Turn the heat down to medium-low and toss in the fresh noodles. Now pour the sauce mixture over the noodles and continue to toss, coating all the noodles evenly.
Finally, add in the tomatoes and basil. Continue to toss everything together until everything is combined.
Turn off the heat, and remove the wok from the stove. Lastly, cut the tofu into smaller pieces and add in with the noodles.
Serve immediately and enjoy!
