Have leftover rice? Don't waste it! Why not make some fried rice?!

Ingredients
1-2 cups of leftover rice that’s been sitting in your refrigerator
1 ½ cups of Kimchi (check the ingredients to ensure it’s vegan/plant-based)
¼ cup shredded Seaweed (you can use the seaweed snack packets or tea a seaweed wrapper)
2-3 Tbsp. of Tamari or Soy Sauce
1-2 Tbsp. of Sesame Seed Oil
Instructions
On medium-high heat, throw in some olive oil and your rice. Mix your rice around, breaking up any clumps.
Next, evenly pour in the soy sauce and sesame seed oil over the rice. Continue to stir and fold the rice for about 2-3 minutes, allowing the sauce and oil to flavor the rice.
Now add in your kimchi and the kimchi paste. Continue to mix everything together until all the rice is coated.
Last, turn off the heat and garnish with your seaweed. You can always do this after you place the rice as well. Enjoy!
